When these institutions make purchasing decisions — and develop purchasing processes — that center health equity and environmental considerations, their spending can generate wins for communities, workers, and businesses.

Communities of color, people with low income, and immigrants are disproportionately affected by COVID-19 and the economic effects of the pandemic. For these communities, food procurement policies can support access to the drivers of good health and economic prosperity. Governments and institutions should focus on procurement policies as immediate and long-term strategies to reduce health inequities.
